Aloo palak curry is a very simple and healthy recipe with a combination of cubed potatoes and chopped spinach cooked with masalas and indian spices. It is perfect to serve this subzi hot with rotis or parathas or rice. Lets look at the steps to make this simple sabzi recipe.

Aloo Palak Curry

Preparation Time : 10 mints | Cooking Time : 20 mints | Serves : 2-3

Ingredients :

Oil - 2 tbspn

Cumin seeds - 1 tspn

Ginger garlic paste - 1 tbspn

G.chili - 1

Onion – 1/4 cup finely chopped

Potatoes – 2 ( medium sized boiled peeled and cubed )

Spinach leaves/Palak – 1 cup tightly packed

Turmeric powder – 1/4 tspn

Red Chili Powder – 1 tspn

Coriander Powder – 1/2 tspn

Garam Masala Powder – 1/2 tspn

Salt – to taste

Method :

1. Wash the potatoes and pressure cook them for 4 whistles. Peel off the skin,chop them into bite sized pieces. Heat oil in a pan add cumin seeds and allow it to splutter. Then add the chopped onions and g.chili.

2. Saute until it turns transparent. Add ginger garlic paste and cook till the raw smell goes. Add turmeric powder and chopped spinach. Cook until the spinach becomes soft(around 5 mints). Stir in between occasionally.

3.Now add cubed potatoes,salt,red chili powder, coriander powder and garam masala powder.Mix well and cook covered for 5 mints. Turn off the flame and add the lemon juice. Mix well.

Serve with rice or roti..!!
