Lemon rice is a rice variety popular in South India. It can be served with stir fry vegetables or appalam or chips. This is also made on special festival occasions such as kanu(kanum pongal) , aadi perukku etc.. Lets look at the procedure of making it.


Preparation Time:10 mints| Cooking Time : 20 mints|Severs: 2

Ingredients :

Raw rice - 1/2 cup

Water - 1.5 cups

Cashew - few (optinoal)

Oil - 2 tbspn

Mustard seeds - 1 tspn

Channa dal - 1 tbspn

Raw Peanuts - 1 tbspn

Green chili - 1

Red chili - 1

Curry leaves - few

Turmeric - 1/4 tspn

Salt - to taste

Lemon juice - 1 tbspn

Steps :

1. Soak the raw rice for half an hour and strain it. Then add 1.5 cups of water and pressure cook it for three whistles. Once cool down open the cooker and spread in a plate. And allowed it to cool down.

2. Heat the oil in kadai and add the mustard seeds . Allow it to pop. Then add the channa dal,peanuts,chili and curry leaves. Once it turns golden add turmeric and hing. Mix well the add the cooked rice.

3.Mix well and turn off the stove. Then add the salt and lemon juice as per taste and mix gently. Add the cashews fried in ghee.

Now its ready to serve.


Notes :

If you like ginger , you can grated or chopped ginger and add while tempering.

Adding the cashews is completely optional.

Increase or decrease the salt and lemon juicw as per your taste.
