PARANGIKAI PORIYAL

Parangikai is also called as yellow pumpkin / poosnikai . This is the simple poriyal made with parankigai and its very easy to make. We can make this poriyal in no time . This poriyal is made of cooked pumpkin with grated coconut along with chili . This taste good along with rasam / sambar sadham.

Preparation Time:5 mints| Cooking Time : 15 mints|Severs: 2

 

Ingredients :

 

Parankigai / Yellow pumpkin - 1 cup ( cut into bite size pieces )

Green chili -1

Red chili - 1

Curry leaves - few

Oil - 2 tbspn

Mustard seeds - 1 tspn

Urad dal - 1 tbspn

Coconut - 2 tbspn

Salt - to taste

Hing - 1 tspn

Turmeric - 1 tspn

Water - 1/4 cup

 

Method :

 

1. In a kadai add the chopped parankigai , water , salt , hing and turmeric . Cook until its soft not marshy . Then in a pan heat the oil add the mustard seeds allow it to pop. Then add the urad dal, g.chili , red chili , curry leaves .

 

2. Once the urad dal turns golden add the parankigai , mix well and cook for two mints . Then add the grated coconut toss well and serve with sambar or rasam.

 

My Notes :

 

1. You can increase the amount of coconut as per your taste.

2. You can also add sambar powder instead of chili .
