Carrot Raita is the most easiest and simplest raita variety that can be made with very less ingredients in jiffy time. This carrot raita goes well with briyani , pulao , spinach roti etc.. This raita is so tasty as the fresh carrots along with homemade curd. As we had tempering to the raita it tastes well with those flavors.

Oil - 2 tbspn
Mustard Seeds - 1 tspn
Cumin Seeds - 1 tspn
Urad dal - 1 tbspn
Green Chili - 2 chopped
Curry leaves - few chopped
Curd - 1 cup
Carrot - 1 small grated
Salt - to taste
1. Peel the carrot and grate the carrot finely. Take a cup of thick curd in a bowl and beat well .
2. Add the grated carrot to the curd and mix well along with salt. Heat the oil in a pan and add the mustard , cumin seeds allow it to pop. Then add the urad dal, g.chili,curry leaves . Cook until golden brown.
3. Then add it to the curd and mix well.
Now its ready to serve.
